Pumpkin Spice Waffles

spelt or whole-wheat pastry flour
Instructions
- 1. Prepare the flax egg by combining flaxseed meal and water in a large bowl and letting it rest for 5 minutes.
- 2. Add pumpkin puree, oil, brown sugar, baking powder, and pumpkin pie spice to the bowl and whisk together.
- 3. Stir in the almond milk and coffee until combined.
- 4. Add the flour and stir until just combined, then let the batter rest for 5 minutes while preheating the waffle iron.
- 5. Generously spray the waffle iron with non-stick cooking spray.
- 6. Spoon about ½ cup of the batter onto the center of the iron and cook according to your machine’s instructions.
- 7. Once done, remove the waffles and place them on a cooling rack to let steam escape and crisp up.
- 8. Serve warm with vegan butter and maple syrup, optionally mixed with coffee or espresso.
