Ingredients

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • ¼ cup pumpkin puree
  • ¼ cup brown sugar
  • 1 Tbsp avocado, melted coconut, or olive oil
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • ½ cup unsweetened almond milk
  • cup very strong brewed coffee
  • 1 ¼ cups spelt or whole-wheat pastry flour

Instructions

  1. 1. Prepare the flax egg by combining flaxseed meal and water in a large bowl and letting it rest for 5 minutes.
  2. 2. Add pumpkin puree, oil, brown sugar, baking powder, and pumpkin pie spice to the bowl and whisk together.
  3. 3. Stir in the almond milk and coffee until combined.
  4. 4. Add the flour and stir until just combined, then let the batter rest for 5 minutes while preheating the waffle iron.
  5. 5. Generously spray the waffle iron with non-stick cooking spray.
  6. 6. Spoon about ½ cup of the batter onto the center of the iron and cook according to your machine’s instructions.
  7. 7. Once done, remove the waffles and place them on a cooling rack to let steam escape and crisp up.
  8. 8. Serve warm with vegan butter and maple syrup, optionally mixed with coffee or espresso.
