Ingredients

Dry Mix

  • cup all-purpose flour
  • ½ cup cornstarch
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Mix

  • 1 cup shaken buttermilk
  • ½ cup pure pumpkin puree
  • 6 tablespoons neutral oil
  • 7 tablespoons unsalted butter, melted and cooled
  • 2 teaspoons vanilla extract
  • 2 large egg whites
  • ½ cup sugar

Instructions

  1. 1. Mix together the dry ingredients in a large bowl and set aside.
  2. 2. In a large measuring cup, whisk together the buttermilk, pumpkin puree, oil, melted butter, and vanilla. Combine with the dry ingredients until barely mixed.
  3. 3. In another bowl, beat the egg whites until foamy, add sugar, and continue until stiff peaks form. Fold the egg whites into the batter.
  4. 4. Cook the batter according to your waffle iron's instructions, typically about 3 minutes.
