Instructions
- Preheat the waffle maker.
- In a large bowl, blend the pumpkin puree, evaporated milk, egg yolks, and vanilla extract until smooth.
- Sift the all-purpose flour into another bowl, then mix in the cornstarch, baking powder, powdered sugar, sugar, cinnamon, nutmeg, pumpkin pie spice, salt, and lemon zest.
- Combine the dry ingredients with the wet ingredients and mix until just combined.
- Whip the egg whites until stiff peaks form, then gently fold them into the batter.
- Spray the waffle maker with cooking oil and pour ½ cup of batter for each waffle, cooking until golden brown.
- Serve immediately with optional toppings.
