Ingredients

The batter

  • 1 cup organic pumpkin puree
  • 2 cups evaporated milk
  • 3 large organic eggs, separated
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • 2 tsp baking powder
  • cup powdered sugar
  • ¼ cup sugar
  • 2 tsp ground nutmeg
  • 2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • ¼ tsp sea salt
  • 2 tsp lemon zest

Optional toppings

  • to taste butter
  • to taste candied pecans
  • to taste maple syrup

Instructions

  1. Preheat the waffle maker.
  2. In a large bowl, blend the pumpkin puree, evaporated milk, egg yolks, and vanilla extract until smooth.
  3. Sift the all-purpose flour into another bowl, then mix in the cornstarch, baking powder, powdered sugar, sugar, cinnamon, nutmeg, pumpkin pie spice, salt, and lemon zest.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. Whip the egg whites until stiff peaks form, then gently fold them into the batter.
  6. Spray the waffle maker with cooking oil and pour ½ cup of batter for each waffle, cooking until golden brown.
  7. Serve immediately with optional toppings.
