Ingredients

The batter

  • 2 ½ cups flour
  • 2 tablespoons ground flaxseed
  • 2 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 2 cups milk
  • 4 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons oil
  • 3 tablespoons melted butter

For serving

  • to taste pure maple syrup

Instructions

  1. Preheat the Belgian waffle iron to medium.
  2. Combine the dry ingredients in a mixer.
  3. In a separate bowl, combine the wet ingredients, including the melted butter.
  4. Add the wet ingredients to the dry ingredients and mix until smooth.
  5. Spray the hot waffle iron with cooking spray.
  6. Add about ½ cup of the waffle mix to the iron and spread it evenly.
  7. Close the lid and cook for about 1 minute and 45 seconds until browned and fluffy.
  8. Remove the waffle and repeat with the remaining batter.
  9. Top with butter and maple syrup before serving.
