Arugula Salad with Tomatoes

Ingredients

  • 4 cups baby arugula leaves
  • 2 large ripe tomatoes
  • ¼ cup chopped fresh basil leaves
  • ¼ cup pine nuts
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • as desired freshly ground black pepper
  • as desired sea salt

Instructions

  1. Line a salad platter or shallow salad bowl with arugula leaves.
  2. Arrange tomato slices over the arugula.
  3. Sprinkle with fresh basil leaves and pine nuts.
  4. Drizzle with balsamic vinegar and extra virgin olive oil.
  5. Sprinkle with freshly ground black pepper and sea salt if desired.
  6. Serve immediately.
