Ingredients

Marinade

  • 1 tablespoon garlic, finely chopped
  • 2-3 teaspoons onion powder
  • 2 teaspoons thyme, minced
  • 2 tablespoons parsley, minced
  • 1 teaspoon paprika
  • 1 teaspoon black pepper, freshly ground
  • 3-4 tablespoons melted butter or oil

Main Ingredients

  • 4 pieces chicken leg quarters
  • to taste salt

Vegetables

  • 2 pounds potatoes and carrots, cleaned and cut into small chunks

Instructions

  1. Preheat the oven to 375℉ (190℃).
  2. Combine garlic, onion powder, thyme, parsley, paprika, and pepper in a bowl, then mix in melted butter or oil.
  3. Wash and dry the chicken leg quarters, then season with salt and marinate with the garlic mixture.
  4. Refrigerate the marinated chicken until ready to cook.
  5. Line a baking pan with foil and insert a wire rack, then arrange the chicken in a single layer.
  6. Place the potatoes and carrots underneath the chicken.
  7. Bake in the preheated oven for about 45-60 minutes until cooked through and the skin is crispy.
  8. Rotate the chicken halfway through baking and cover with foil if it starts to over-brown.
  9. Remove from the oven and serve with the potatoes and carrots.
