Instructions
- Preheat the oven to 375℉ (190℃).
- Combine garlic, onion powder, thyme, parsley, paprika, and pepper in a bowl, then mix in melted butter or oil.
- Wash and dry the chicken leg quarters, then season with salt and marinate with the garlic mixture.
- Refrigerate the marinated chicken until ready to cook.
- Line a baking pan with foil and insert a wire rack, then arrange the chicken in a single layer.
- Place the potatoes and carrots underneath the chicken.
- Bake in the preheated oven for about 45-60 minutes until cooked through and the skin is crispy.
- Rotate the chicken halfway through baking and cover with foil if it starts to over-brown.
- Remove from the oven and serve with the potatoes and carrots.
