Honey Garlic Chicken Quarters

The glaze

Instructions
- Remove the chicken quarters from the refrigerator and let them sit at room temperature for 15-30 minutes.
- Preheat the oven to 375°F.
- Combine sea salt, black pepper, ginger powder, and baking powder in a small bowl.
- Place a wire rack on an aluminum foil-lined baking sheet and spray it with cooking spray.
- Season the chicken with the dry mixture on both sides and place it on the wire rack, meaty side up.
- Bake the chicken for 45-55 minutes or until it reaches an internal temperature of 165°F.
- In a small sauce pot, combine rice vinegar and garlic over medium heat and cook until aromatic.
- Add honey to the pot and simmer for 5-10 minutes, then set aside.
- Once the chicken is done, brush it with the honey garlic glaze and return it to the oven for an additional 5-7 minutes.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
