Ingredients

The chicken

  • 4 pieces chicken leg quarters or breast quarters
  • 1 teaspoon fine sea salt or table salt
  • ½ teaspoon black pepper
  • ½ teaspoon baking powder
  • ½ teaspoon ginger powder (optional)

The glaze

  • ½ cup honey
  • 2 tablespoons fresh garlic, finely diced
  • 1 teaspoon rice vinegar or apple cider vinegar

Instructions

  1. Remove the chicken quarters from the refrigerator and let them sit at room temperature for 15-30 minutes.
  2. Preheat the oven to 375°F.
  3. Combine sea salt, black pepper, ginger powder, and baking powder in a small bowl.
  4. Place a wire rack on an aluminum foil-lined baking sheet and spray it with cooking spray.
  5. Season the chicken with the dry mixture on both sides and place it on the wire rack, meaty side up.
  6. Bake the chicken for 45-55 minutes or until it reaches an internal temperature of 165°F.
  7. In a small sauce pot, combine rice vinegar and garlic over medium heat and cook until aromatic.
  8. Add honey to the pot and simmer for 5-10 minutes, then set aside.
  9. Once the chicken is done, brush it with the honey garlic glaze and return it to the oven for an additional 5-7 minutes.
  10. Remove the chicken from the oven and let it rest for 5 minutes before serving.
