Tomato Vinaigrette

Ingredients

  • 1 cup ripe cherry or grape tomatoes
  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar or sherry vinegar
  • 2 teaspoons maple syrup or honey
  • 2 tablespoons shallot
  • 1–2 cloves garlic
  • 10 leaves fresh basil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Char the tomatoes in a dry skillet over medium-high heat for about 7-8 minutes until softened and blackened in spots.
  2. Combine the charred tomatoes with olive oil, vinegar, maple syrup, shallots, garlic, and basil in a blender and pulse until combined, leaving some texture.
  3. Transfer the mixture to a jar and refrigerate until ready to use.
