Maple Balsamic Brussels Sprouts

Ingredients

  • ¾ cup pecans
  • 4 slices turkey bacon
  • 2 lbs Brussels sprouts
  • 3 tbsp avocado oil
  • 1 tsp salt
  • ½ tsp pepper
  • 3 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • ¼ cup dried cranberries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toast the chopped pecans on the baking sheet for 6 minutes.
  3. Cook the turkey bacon on the stove for about 5 minutes on each side and let it cool.
  4. Increase the oven temperature to 425°F and prepare the Brussels sprouts by tossing them with avocado oil on the baking sheet, face down, and bake for 20 minutes.
  5. While the sprouts are baking, whisk together the balsamic vinegar and maple syrup.
  6. Toss the baked Brussels sprouts with salt and pepper, then add the vinegar mixture and toss to coat.
  7. Chop the turkey bacon and add it to the Brussels sprouts along with the pecans and cranberries.
  8. Stir to combine and serve immediately.
