Instructions
- Pulse bacon, garlic, and shallot in a food processor until a paste forms and set aside.
- Heat avocado or coconut oil in a pan, add annatto seeds, and stir until the oil turns bright orange. Remove seeds and set oil aside.
- Mix sausage ingredients in a food processor or stand mixer for 10 minutes until fine in texture.
- Add bacon fat mixture and annatto oil to the pork mixture and mix for an additional 5 minutes.
- Chill the meat mixture in the fridge for 10 minutes and soak skewers in water.
- Form sausage mixture into balls and skewer them.
- Preheat grill to 450-500°F, oil the grill grates, and grill skewers for about 3 minutes per side until internal temperature reaches 145°F.
