Chocolate-Covered Strawberry Granola

Instructions
- Preheat the oven to 325°F and line a large rimmed cookie sheet with parchment paper or a silicone mat.
- In a small saucepan, combine the coconut oil, butter, and honey over medium-low heat until melted.
- In a separate bowl, mix the brown sugar and cocoa powder, then add to the melted mixture and stir until smooth.
- Remove from heat and stir in the salt and vanilla extract.
- In a large bowl, combine the rolled oats, almonds, and coconut, then pour the wet mixture over and stir until coated.
- Spread the mixture onto the cookie sheet and bake for about 30 minutes, stirring every 10 minutes until golden brown.
- Let the granola cool for about 10 minutes, then break it into pieces.
- Add the freeze-dried strawberries, breaking them into smaller pieces as you mix them in.
- Melt the chocolate using a double boiler and drizzle it over the granola, allowing it to cool and harden for 1 to 2 hours.
- Once hardened, break up the granola and store it in an airtight container.
