Chocolate-Covered Strawberry Granola

Ingredients

The granola

  • ¼ cup coconut oil (solid, not melted)
  • ¼ cup unsalted butter
  • ¼ cup honey
  • ¼ cup golden brown sugar
  • ¼ cup Dutch process cocoa powder
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 2 cups sliced almonds
  • 1 cup sweetened shredded coconut
  • 1 ½ cups freeze-dried strawberries (1.2 ounces)

The chocolate drizzle

  • 1 4-ounce 60% cacao bittersweet chocolate bar

Instructions

  1. Preheat the oven to 325°F and line a large rimmed cookie sheet with parchment paper or a silicone mat.
  2. In a small saucepan, combine the coconut oil, butter, and honey over medium-low heat until melted.
  3. In a separate bowl, mix the brown sugar and cocoa powder, then add to the melted mixture and stir until smooth.
  4. Remove from heat and stir in the salt and vanilla extract.
  5. In a large bowl, combine the rolled oats, almonds, and coconut, then pour the wet mixture over and stir until coated.
  6. Spread the mixture onto the cookie sheet and bake for about 30 minutes, stirring every 10 minutes until golden brown.
  7. Let the granola cool for about 10 minutes, then break it into pieces.
  8. Add the freeze-dried strawberries, breaking them into smaller pieces as you mix them in.
  9. Melt the chocolate using a double boiler and drizzle it over the granola, allowing it to cool and harden for 1 to 2 hours.
  10. Once hardened, break up the granola and store it in an airtight container.
