Easy Strawberry Cake

Ingredients

For the Roasted Strawberries

  • 16 ounces strawberries, hulled and halved
  • 3 tablespoons honey
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon kosher salt

For the Cake

  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1 medium lemon
  • 2 large eggs
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • ¾ cup all-purpose flour
  • ¼ cup almond flour/meal
  • ½ teaspoon baking powder
  • 6 tablespoons unsalted butter, melted and cooled
  • ¼ cup sliced almonds

Instructions

  1. Preheat the oven to 375°F and roast the strawberries for 20-25 minutes.
  2. Blend the sugar and lemon zest together until moist and fragrant.
  3. Whisk in the eggs, salt, vanilla extract, and almond extract.
  4. Fold in the almond flour, all-purpose flour, and baking powder, then add the melted butter.
  5. Pour the batter into a buttered skillet or pan, top with sliced almonds and half of the roasted strawberries.
  6. Bake at 350°F for 22-25 minutes, then add the remaining strawberries on top and let cool.
