Crispy Roasted Red Potato Slices

Instructions
- 1. Preheat the oven to 400°F and position one rack in the middle and another 6 inches below the broiler.
- 2. Grease the bottom of a 9 x 13 pan with olive oil.
- 3. Thinly slice the red potatoes and arrange them in the pan, fanning them out.
- 4. Drizzle olive oil over the potatoes and sprinkle with garlic powder, salt, and pepper.
- 5. Cover the pan with foil and bake for about 20 minutes until fork tender.
- 6. Remove the foil and switch the oven to high broil, baking until the tops are golden, about 5 minutes.
- 7. Optionally, dot with butter immediately after removing from the oven.
