Ingredients

The potatoes

  • 1 pound medium red potatoes

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • to taste freshly ground black pepper
  • 1 tablespoon butter (optional)

Instructions

  1. 1. Preheat the oven to 400°F and position one rack in the middle and another 6 inches below the broiler.
  2. 2. Grease the bottom of a 9 x 13 pan with olive oil.
  3. 3. Thinly slice the red potatoes and arrange them in the pan, fanning them out.
  4. 4. Drizzle olive oil over the potatoes and sprinkle with garlic powder, salt, and pepper.
  5. 5. Cover the pan with foil and bake for about 20 minutes until fork tender.
  6. 6. Remove the foil and switch the oven to high broil, baking until the tops are golden, about 5 minutes.
  7. 7. Optionally, dot with butter immediately after removing from the oven.
