Chocolate Sorbet

Ingredients

  • 2 ¼ cups water
  • ½ cup sugar
  • pinch salt
  • ½ cup unsweetened cocoa powder
  • ¼ tsp pure vanilla extract
  • ¼ cup freshly brewed espresso

Instructions

  1. Combine half of the water, sugar, salt, and cocoa powder in a saucepan and warm over medium heat.
  2. Bring the mixture to a full boil while whisking, then reduce heat and simmer for thirty seconds.
  3. Remove from heat and stir in the vanilla and espresso.
  4. Add the remaining water and mix well.
  5. Transfer the mixture to a bowl and chill in the refrigerator for about an hour.
  6. Once chilled, freeze the mixture in an ice cream maker according to the manufacturer's instructions.
