Ingredients

The noodles and sauces

  • 8 pieces uncooked lasagna noodles
  • 15 oz can tomato sauce
  • 1 cup pizza sauce
  • ½ teaspoon Italian seasoning

The filling

  • 1 lb uncooked hot Italian poultry sausage
  • 2 oz turkey pepperoni, chopped
  • 1 container fat free Ricotta cheese (15 oz)
  • 1 package frozen chopped spinach (10 oz)
  • 1 large egg

The topping

  • 2 oz 2% shredded Mozzarella cheese
  • 8 slices turkey pepperoni (for topping)

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish.
  2. Cook the lasagna noodles according to package instructions, then drain and cool.
  3. Mix the tomato sauce, pizza sauce, and Italian seasoning in a bowl.
  4. Cook the sausage in a skillet until browned, then add chopped pepperoni and some of the sauce mixture.
  5. Combine ricotta, spinach, and egg in a bowl.
  6. Spread cheese mixture on each noodle, add the meat mixture, and roll them up.
  7. Place some sauce in the baking dish, arrange the rolls seam-side down, and cover with remaining sauce and cheese.
  8. Cover with foil and bake for 40 minutes.
