Stir Fried Noodles with Shrimp and Vegetables

Ingredients

The main ingredients

  • 1 lb raw, tail-off shrimp
  • 8 oz dry pancit canton noodles

The vegetables

  • 1 head green cabbage
  • 2 large carrots
  • 3 cloves garlic
  • 1 medium onion
  • to taste calamansi (or lime) juice
  • for topping sliced green onions

The liquids and seasonings

  • 3 cups chicken stock
  • 3 tablespoons oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce

Instructions

  1. Mince the garlic and onion, then heat 1 tablespoon of oil in a large skillet and stir-fry the garlic and onion until soft.
  2. Add the shrimp and cook until no longer translucent, then remove from heat.
  3. Chop the cabbage and grate the carrots, then stir-fry the vegetables in another tablespoon of oil until tender-crisp.
  4. In a large pot, bring the chicken stock, soy sauce, and fish sauce to a boil, then add the pancit noodles and cook until soft.
  5. Combine the shrimp and vegetables with the noodles in the pot and stir to mix.
  6. Add the remaining tablespoon of oil to a skillet and stir-fry the mixture until most of the liquid is absorbed.
  7. Stir in the calamansi juice and top with sliced green onions before serving.
