The frosting

The chocolate shell

semi-sweet chocolate, coarsely chopped

canola or vegetable oil

Instructions
- Set the egg whites out to reach room temperature.
- Make the confetti cupcakes and allow them to cool completely.
- Prepare the marshmallow meringue frosting by whisking egg whites, sugar, and cream of tartar over simmering water until the sugar dissolves.
- Transfer the mixture to a mixer, add vanilla, and whip until soft peaks form.
- Pipe the frosting onto cooled cupcakes and chill until firm.
- Melt chocolate and oil together, let cool slightly, then dip each cupcake into the chocolate.
- Add sprinkles on top and refrigerate to set the chocolate.
