Ingredients

The cupcakes

  • 1 batch confetti cupcakes (or any cupcakes)

The frosting

  • 3 large egg whites, room temperature
  • ¾ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract
  • a pinch salt

The chocolate shell

  • 10 ounces semi-sweet chocolate, coarsely chopped
  • tablespoons canola or vegetable oil
  • optional sprinkles for topping

Instructions

  1. Set the egg whites out to reach room temperature.
  2. Make the confetti cupcakes and allow them to cool completely.
  3. Prepare the marshmallow meringue frosting by whisking egg whites, sugar, and cream of tartar over simmering water until the sugar dissolves.
  4. Transfer the mixture to a mixer, add vanilla, and whip until soft peaks form.
  5. Pipe the frosting onto cooled cupcakes and chill until firm.
  6. Melt chocolate and oil together, let cool slightly, then dip each cupcake into the chocolate.
  7. Add sprinkles on top and refrigerate to set the chocolate.
