Perfectly Seasoned Roasted Mexican Potatoes

The Mexican seasoning

chili powder

cumin

Instructions
- Preheat the oven to 400°F and line a large sheet pan with parchment paper.
- Mix the Mexican seasoning ingredients in a small bowl.
- Wash and dry the potatoes, then chop them into small cubes and place in a bowl.
- If using, chop the onion and bell pepper and add to the bowl with the potatoes.
- Drizzle avocado oil over the potatoes and toss to coat.
- Sprinkle the seasoning mixture over the potatoes and toss again to coat evenly.
- Spread the potatoes out evenly on the sheet pan.
- Bake in the oven for 30-40 minutes, or until the potatoes are soft when pierced with a fork.
- Remove from the oven and serve.
