Ingredients

The potatoes

  • 2 pounds red potatoes

The seasoning

  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper

The garnish

  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Clean and dry the potatoes, then cut them into 1-inch cubes.
  3. In a large bowl, combine the potatoes with olive oil and all the spices, mixing well.
  4. Spread the potatoes in a single layer on the baking sheet and bake for 35-40 minutes until golden brown.
  5. Transfer the potatoes to a serving dish and top with cilantro before serving.
