Ingredients

The potatoes

  • 2 lbs potatoes, cut into even sized cubes

The sauce

  • 3 tbsp avocado oil
  • 2 tbsp white vinegar
  • 2 tbsp tomato paste

The seasoning

  • 1 tbsp chili powder
  • 2 tsp dried parsley
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp pepper

Instructions

  1. Preheat the oven to 400°F and line a large sheet pan with parchment paper.
  2. Chop the potatoes and place them in a bowl.
  3. Mix together the avocado oil, tomato paste, and white vinegar until it has a ketchup-like consistency.
  4. Pour the mixture over the potatoes and toss to coat.
  5. In a small bowl, mix together the Spanish seasonings and sprinkle over the potatoes, tossing to coat.
  6. Spread the potatoes evenly on the sheet pan and bake for 30-35 minutes until soft when pierced with a fork.
  7. Remove from the oven and serve.
