Crispy Oven Roasted Spanish Potatoes

Instructions
- Preheat the oven to 400°F and line a large sheet pan with parchment paper.
- Chop the potatoes and place them in a bowl.
- Mix together the avocado oil, tomato paste, and white vinegar until it has a ketchup-like consistency.
- Pour the mixture over the potatoes and toss to coat.
- In a small bowl, mix together the Spanish seasonings and sprinkle over the potatoes, tossing to coat.
- Spread the potatoes evenly on the sheet pan and bake for 30-35 minutes until soft when pierced with a fork.
- Remove from the oven and serve.
