Chili Roasted Potatoes

Ingredients

The potatoes

  • 3 lbs potatoes
  • 2 Tbsp olive oil

The chili seasoning

  • ½ Tbsp chili powder
  • ½ tsp cumin
  • tsp cayenne pepper
  • tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp salt
  • 5-10 cranks freshly ground pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Wash the potatoes and cut them into 1 to 2 inch cubes.
  3. In a large bowl, combine the cubed potatoes with olive oil and all the spices, tossing until well coated.
  4. Spread the potatoes in a single layer on a baking sheet lined with foil or parchment paper.
  5. Roast the potatoes for 40 minutes, or until they are golden brown and blistered.
