Ingredients

  • 15-20 pieces pitted medjool dates
  • 1 cup raw or roasted cashews (unsalted)
  • ½ cup dried cranberries
  • ½ cup dairy-free dark or semisweet chocolate chips

Instructions

  1. Process cashews in a food processor until in small pieces but not flour-like, then set aside.
  2. Process dates until they form small sticky pieces.
  3. Combine ground cashews, cranberries, and chocolate chips with the dates and mix until well combined.
  4. Check if the mixture sticks together; if too crumbly, add more dates.
  5. Scoop 1 tablespoon of the mixture and form into balls using your hands.
  6. Place the balls on a cookie sheet and refrigerate.
  7. Insert skewers or Popsicle sticks after chilling, then store at room temperature in a plastic bag or Tupperware.
