Instructions
- Process cashews in a food processor until in small pieces but not flour-like, then set aside.
- Process dates until they form small sticky pieces.
- Combine ground cashews, cranberries, and chocolate chips with the dates and mix until well combined.
- Check if the mixture sticks together; if too crumbly, add more dates.
- Scoop 1 tablespoon of the mixture and form into balls using your hands.
- Place the balls on a cookie sheet and refrigerate.
- Insert skewers or Popsicle sticks after chilling, then store at room temperature in a plastic bag or Tupperware.
