Pear Brie & Caramelised Onions Quesadillas

Ingredients

Balsamic Glaze/Reduction

  • ½ cup balsamic vinegar
  • 1-2 tablespoons coconut/cane sugar/sucanat
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground black pepper

Quesadillas

  • ½ medium onion, peeled and sliced thinly
  • 1 piece pear, cored and sliced thinly
  • 2 ounces Brie cheese
  • 3-4 sprigs thyme, stems removed
  • 6-8 pieces tortillas
  • 1 tablespoon vegan butter or coconut oil

Instructions

  1. Prepare the balsamic glaze by heating all glaze ingredients in a pot over medium-high heat, stirring until it thickens.
  2. While the glaze thickens, heat butter in a pan over medium-high heat and add the onion slices.
  3. Caramelize the onions for about 15 minutes, stirring occasionally, and add water if needed to prevent burning.
  4. On tortillas, layer pear slices, thyme, Brie cheese, and caramelized onions, then top with another tortilla.
  5. Cook the quesadilla in a pan or grill over medium-high heat for about 3 minutes on each side until crispy and cheese is melted.
  6. Slice the quesadilla and drizzle with balsamic glaze before serving.
