Maple Mustard Brussels Sprouts

Ingredients

  • 3 slices uncured bacon
  • 2 tablespoons oil
  • 2 pounds fresh Brussels sprouts, halved
  • ¼ teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons pure maple syrup
  • 2 tablespoons stone ground or Dijon mustard

Instructions

  1. 1. Heat a large skillet over medium heat and cook the bacon until browned and crispy, about 7-10 minutes. Remove and chop into pieces.
  2. 2. Drain most of the bacon fat from the skillet, then heat the oil to medium-high.
  3. 3. Add the Brussels sprouts cut side down and cook for 3-4 minutes until browned. Flip and cook for another 3-4 minutes, seasoning with salt and pepper.
  4. 4. Transfer the cooked Brussels sprouts to a serving plate.
  5. 5. In a small bowl, whisk together the maple syrup and mustard until combined.
  6. 6. Drizzle the Brussels sprouts with the maple mustard sauce and top with the chopped bacon.
