Sauteed Shrimp and Broccoli

Ingredients

The main ingredients

  • 1 tbsp avocado oil
  • 2 lb large raw tiger shrimp, peeled and deveined
  • 4 cups fresh broccoli florets
  • 1 medium red bell pepper, seeded and sliced
  • ½ cup dry roasted cashews
  • 3 medium green onions, sliced diagonally
  • 3 cloves garlic, chopped
  • 2 tsp grated fresh ginger

The sauce

  • ¼ cup coconut aminos
  • 2 tbsp unseasoned rice vinegar
  • 2 tbsp unpasteurized honey
  • 1 tbsp toasted sesame oil
  • 1 tbsp fish sauce
  • 1 tbsp sambal oelek

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a glass measuring cup until well combined.
  2. Heat the oil in a wok or large skillet over high heat and sauté the shrimp until pink but slightly translucent, then remove them to a plate.
  3. In the same pan, add broccoli and bell peppers, sautéing until slightly softened.
  4. Add green onions, garlic, ginger, and cashews, sauté for about 30 seconds.
  5. Pour in the sauce and cook for about 2 minutes until the broccoli is softened and the sauce reduces.
  6. Return the shrimp to the wok, stir well, and let the dish rest until shrimp is fully cooked.
  7. Serve with steamed rice if desired.
