Lemon Butter Sauce

butter, cut into 1-tablespoon pieces

fresh lemon juice

Instructions
- In a small saucepan over medium-low heat, cook 2 tablespoons of butter until it smells nutty and just barely turns brown, then remove from heat and transfer to a small bowl.
- Wipe out the saucepan and boil the lemon juice with salt and pepper until reduced to about 1 tablespoon.
- Remove the saucepan from heat and whisk in 2 pieces of chilled butter.
- Set the pan over very low heat and whisk in the remaining butter, one piece at a time, until a thick, creamy sauce forms.
- Remove from heat and whisk in the browned butter.
- Before serving, whisk in 1 tablespoon of hot water in ½ teaspoon increments.
