Lemon Butter Sauce

Ingredients

  • 6 tablespoons butter, cut into 1-tablespoon pieces
  • 4 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • 1 pinch freshly cracked black pepper
  • 1 tablespoon hot water

Instructions

  1. In a small saucepan over medium-low heat, cook 2 tablespoons of butter until it smells nutty and just barely turns brown, then remove from heat and transfer to a small bowl.
  2. Wipe out the saucepan and boil the lemon juice with salt and pepper until reduced to about 1 tablespoon.
  3. Remove the saucepan from heat and whisk in 2 pieces of chilled butter.
  4. Set the pan over very low heat and whisk in the remaining butter, one piece at a time, until a thick, creamy sauce forms.
  5. Remove from heat and whisk in the browned butter.
  6. Before serving, whisk in 1 tablespoon of hot water in ½ teaspoon increments.
