Instructions
- If using one large chicken breast, cut it in half lengthwise.
- Whisk the marinade ingredients together and marinate the chicken for 1 to 4 hours, up to 8 hours.
- Combine the Tex-Mex sauce ingredients in a small bowl and refrigerate until ready to use.
- Remove the marinated chicken from the refrigerator and let it rest at room temperature for about 15 minutes before grilling.
- Grill the chicken until cooked through with an internal temperature of 165°F.
- Transfer the grilled chicken to a baking sheet, divide the sauce over each piece, and top with shredded cheese.
- Broil until the cheese is melted and bubbly.
- Sprinkle crushed tortilla chips over the chicken and garnish with your favorite toppings.
