Cheesy Grilled Fiesta Lime Chicken

Ingredients

The Chicken Marinade

  • 2 pieces Chicken Breasts or Chicken Thighs (about 12 oz.)
  • 2 tbsp Olive Oil
  • 1 tbsp Honey
  • ½ tsp Cumin
  • ½ tsp Smoked Paprika
  • ½ tsp Lime Zest
  • 1 tbsp fresh Lime Juice
  • 1 clove Garlic, minced
  • 1 tbsp Worcestershire Sauce or Low Sodium Soy Sauce
  • pinch Salt + Pepper

The Tex-Mex Sauce

  • 1 tbsp Sour Cream
  • 1 tbsp Mayonnaise
  • 1 tbsp Salsa
  • ¼ tsp Cumin
  • ¼ tsp Smoked Paprika
  • ¼ tsp Garlic Powder
  • ¼ tsp Mexican Oregano
  • tsp Cayenne (optional)
  • ½ tsp Lime Zest
  • 1 tbsp fresh Lime Juice

For Serving

  • ½ cup Shredded Mexican Cheese Blend
  • ½ cup Crushed Tortilla Chips

Instructions

  1. If using one large chicken breast, cut it in half lengthwise.
  2. Whisk the marinade ingredients together and marinate the chicken for 1 to 4 hours, up to 8 hours.
  3. Combine the Tex-Mex sauce ingredients in a small bowl and refrigerate until ready to use.
  4. Remove the marinated chicken from the refrigerator and let it rest at room temperature for about 15 minutes before grilling.
  5. Grill the chicken until cooked through with an internal temperature of 165°F.
  6. Transfer the grilled chicken to a baking sheet, divide the sauce over each piece, and top with shredded cheese.
  7. Broil until the cheese is melted and bubbly.
  8. Sprinkle crushed tortilla chips over the chicken and garnish with your favorite toppings.
