Ingredients

The base

  • 1 green plantain grated
  • 2 tablespoons avocado oil

The guacamole

  • 1 avocado diced into chunks
  • red onion diced
  • a pinch garlic powder
  • salt and pepper to taste

The protein

  • 6-8 links sausage (or about ⅓ lb ground breakfast sausage)
  • 2 eggs

Instructions

  1. Score and peel the plantain, then grate it and set aside.
  2. In a bowl, combine avocado, onion, garlic powder, salt, and pepper, mixing well.
  3. Heat a skillet over medium heat and cook the sausage for about 8 minutes, flipping halfway.
  4. In another pan, heat avocado oil and form the grated plantain into two patties, cooking until golden brown on both sides.
  5. Fry the eggs to your liking in a separate pan.
  6. Assemble the stacks with a plantain base, avocado mixture, sausage, and top with an egg.
