Instructions
- Score and peel the plantain, then grate it and set aside.
- In a bowl, combine avocado, onion, garlic powder, salt, and pepper, mixing well.
- Heat a skillet over medium heat and cook the sausage for about 8 minutes, flipping halfway.
- In another pan, heat avocado oil and form the grated plantain into two patties, cooking until golden brown on both sides.
- Fry the eggs to your liking in a separate pan.
- Assemble the stacks with a plantain base, avocado mixture, sausage, and top with an egg.
