Ingredients

The chili

  • 2 lbs ground beef or ground bison
  • 1 large sweet potato, peeled and cut in ½-inch cubes (about 3 cups)
  • 1 large yellow onion, diced
  • 8 cloves garlic, minced
  • 2 28-ounce cans fire-roasted diced tomatoes, undrained
  • 1 4-ounce can diced green chilies
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • ½ teaspoon ground chipotle or ancho chili powder
  • 2 teaspoons fine salt
  • ½ teaspoon black pepper
  • 2 cups beef broth, chicken broth, or vegetable broth

Optional toppings

  • to taste lime wedges
  • to taste chopped cilantro
  • to taste jalapeno slices
  • to taste sliced green onions
  • to taste jicama sticks
  • to taste tortilla chips
  • to taste sour cream
  • to taste shredded cheese

Instructions

  1. Cook the ground beef in a skillet until browned, draining off any fat.
  2. Transfer the cooked ground beef to the slow cooker and add all remaining ingredients.
  3. Stir well, cover, and cook on high for 4 hours or on low for 6-8 hours until sweet potatoes are tender.
  4. Taste and adjust seasonings if necessary, then serve with desired toppings.
