Ingredients

The chili

  • 2 lbs. Boneless Beef Chuck or Round Roast
  • 1 Tbsp. olive oil or other cooking fat
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 6 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (4-ounce) diced green chilies
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 2 cans (28-ounce) fire-roasted diced tomatoes
  • 3 ounces no-salt-added tomato paste
  • 1 cup low-sodium beef broth

Suggested toppings

  • to taste sliced avocado
  • to taste pickled or fresh jalapeno slices
  • to taste cilantro
  • to taste lime wedges

Instructions

  1. If browning the meat, heat olive oil in a skillet and brown the beef cubes on all sides, then transfer to the slow cooker.
  2. Combine all ingredients in the slow cooker.
  3. Cook on low for 8 hours or until the beef is tender.
  4. Season with additional salt and pepper as needed, and serve with desired toppings.
