Instructions
- Heat a pot on medium-high heat and add olive oil, onions, green peppers, and red peppers.
- Sauté the vegetables until soft, then add minced garlic and stir.
- Add ground beef and cook until browned, seasoning it with chili seasoning.
- Drain excess fat, then add beef broth, beans, diced tomatoes and chilis, tomato paste, and cubed sweet potatoes.
- Stir the mixture, reduce heat to medium-low, cover, and simmer for 35-40 minutes until sweet potatoes are soft.
