Ingredients

The chili base

  • 2 pounds lean ground beef
  • 4 cups low-sodium beef or vegetable broth
  • 4 large sweet potatoes, peeled and chopped
  • 1 15-ounce can pinto beans, rinsed and drained
  • ¼ cup tomato paste

The aromatics and spices

  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 2 onions, chopped
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt

Instructions

  1. Sauté the onion and garlic in cooking oil until softened.
  2. Add the ground beef and cook until it starts to brown.
  3. Stir in the broth, sweet potatoes, beans, tomato paste, chili powder, cumin, and salt.
  4. Lock the lid and cook on high pressure for 8 minutes.
  5. Let the pressure release naturally for 5 minutes, then quick release any remaining pressure.
  6. Remove the lid, stir, and serve hot.
