Sweet Potato Chili

Ingredients

The seasoning

  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp sea salt
  • ¼ tsp thyme

The chili

  • 1 large sweet potato, cubed (or 2 cups cubed butternut squash)
  • 2 medium bell peppers, diced
  • 1 large onion, diced
  • 1 can crushed tomatoes (28 oz)
  • 1 tbsp tomato paste
  • 1 lb ground beef

Instructions

  1. Mix the seasoning ingredients in a small bowl.
  2. Chop the sweet potato, bell peppers, and onion.
  3. For the Instant Pot, add ground beef to the pot and break it up, then add the remaining ingredients and sprinkle the seasoning over top, stirring to combine.
  4. Close the lid and set the pressure valve, then select the 'soup' setting for 30 minutes.
  5. After cooking, quick release the pressure and open the lid. Adjust seasoning if needed and serve.
  6. For the Slow Cooker, combine all ingredients in the slow cooker and mix well.
  7. Cook on high for 3 hours or low for 6 hours. Adjust seasoning if needed and serve.
