Crock Pot Sweet Potato Chipotle Chili

Instructions
- Brown the meat in a skillet, then transfer it to the slow cooker.
- Sauté the onion and garlic in the same skillet until fragrant, then add the bell peppers and cumin, cooking until soft.
- Transfer the sautéed vegetables to the slow cooker on top of the meat.
- Add the sweet potatoes, chili powder, paprika, chipotle sauce, and tomato paste to the slow cooker and mix well.
- Add the diced tomatoes and broth, season with black pepper, and mix again.
- Place the bay leaf on top, cover, and cook on HIGH for 3 to 3½ hours or until the sweet potatoes are tender.
- Remove the bay leaf, adjust seasoning with salt if necessary, and serve warm.
