Crock Pot Sweet Potato Chipotle Chili

Ingredients

The base

  • 1 pound ground lean beef or turkey
  • 1 small yellow onion
  • 2 count bell peppers, diced
  • 1 teaspoon minced garlic
  • 1 pound sweet potatoes, peeled and finely chopped
  • 2 tablespoons tomato paste
  • 14 ounces canned diced fire roasted tomatoes
  • 2 to 2 ½ cups low sodium chicken or vegetable broth

The spices and seasonings

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • kosher salt to taste
  • 2 count chipotles with adobo sauce, chopped
  • optional count bay leaf

Garnishes and toppings

  • to taste fresh chopped cilantro
  • to taste sliced jalapeños
  • to taste shredded cheese
  • to taste tortilla chips

Instructions

  1. Brown the meat in a skillet, then transfer it to the slow cooker.
  2. Sauté the onion and garlic in the same skillet until fragrant, then add the bell peppers and cumin, cooking until soft.
  3. Transfer the sautéed vegetables to the slow cooker on top of the meat.
  4. Add the sweet potatoes, chili powder, paprika, chipotle sauce, and tomato paste to the slow cooker and mix well.
  5. Add the diced tomatoes and broth, season with black pepper, and mix again.
  6. Place the bay leaf on top, cover, and cook on HIGH for 3 to 3½ hours or until the sweet potatoes are tender.
  7. Remove the bay leaf, adjust seasoning with salt if necessary, and serve warm.
