Baked Sockeye Salmon

Ingredients

The salmon

  • 2 pounds sockeye salmon

The seasoning and sauce

  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large lemon
  • 4 cloves garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon fresh dill

Instructions

  1. Bring the salmon to room temperature.
  2. Preheat the oven to 190C (380F) and line a baking tray with foil, lightly greased.
  3. Add half of the lemon slices to the base of the tray.
  4. Whisk together melted butter, olive oil, and minced garlic.
  5. Place the salmon on the lemon slices in the baking dish and pour the garlic butter mixture over it, seasoning with salt and pepper.
  6. Bake the salmon for 17 minutes or until it reaches an internal temperature of 145F.
  7. Remove from the oven, top with remaining lemon slices and fresh dill, cover with foil, and let it rest for 5 minutes before serving.
