Red Pear, Blue Cheese and Walnut Pizza

Ingredients

The pizza crust

  • ¼ recipe whole wheat pizza crust
  • ½ tsp olive oil
  • to taste Himalayan rock salt
  • to taste freshly cracked black pepper
  • to taste freshly grated nutmeg

The toppings

  • 50 g mozzarella, grated
  • 1-2 red pears, thinly sliced
  • 20 g blue cheese, crumbled
  • 30 g walnuts, chopped

The arugula dressing

  • handful arugula
  • ½ tsp olive oil
  • tsp white wine vinegar
  • pinch lemon zest
  • pinch Himalayan rock salt
  • pinch freshly cracked black pepper

Instructions

  1. Preheat the oven to 500°F.
  2. Brush the dough with olive oil and sprinkle with salt, pepper, and nutmeg.
  3. Top the dough with mozzarella, red pear slices, half of the blue cheese, and half of the walnuts.
  4. Bake in the oven for about 10 minutes.
  5. Meanwhile, mix the olive oil, vinegar, lemon zest, salt, and pepper in a bowl and whisk until combined.
  6. Once the pizza is out of the oven, sprinkle the remaining walnuts and blue cheese on top.
  7. Toss the arugula with the dressing and mound it in the center of the pizza.
