Gluten Free Tortillas

Ingredients

The dough

  • ¼ cup Chia Seed meal
  • 1 cup Almond meal flour
  • 2 tablespoons Almond meal flour
  • 2 tablespoons Arrowroot powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Extra virgin olive oil
  • 2 teaspoons Apple cider vinegar
  • ¼ cup Milk substitute
  • ¾ cup Very warm water

Optional seasonings

  • ½ teaspoon Onion powder
  • ½ teaspoon Garlic powder

Instructions

  1. Combine the chia seed meal, almond meal flour, arrowroot powder, baking soda, baking powder, and any optional herbs and spices in a bowl and whisk together.
  2. Add the olive oil, apple cider vinegar, milk substitute, and warm water to the dry ingredients.
  3. Mix the ingredients with a handheld mixer until combined, then let the dough rest for about one minute.
  4. Divide the dough into two portions, then each portion into three for small tortillas or four for large tortillas.
  5. Place one dough ball between two pieces of parchment paper and flatten it with your hand.
  6. Roll out the dough to the desired size (6.5 inches for small or 8 inches for large).
  7. Transfer the rolled dough on the parchment paper to a cookie sheet and bake at 375°F for about 7 minutes for small tortillas or 8 minutes for large tortillas.
  8. Allow the tortillas to cool on a wire rack.
