Ingredients

  • 1 cup almond flour
  • ½ cup coconut flour
  • 3 tablespoons konjac powder (glucomannan powder)
  • 1 teaspoon salt
  • 4 large eggs
  • 2 tablespoons oil
  • 1 cup hot water

Instructions

  1. Boil the water.
  2. Whisk together the dry ingredients in a medium bowl.
  3. Mix the eggs and oil, then blend into the dry ingredients using a hand mixer.
  4. Pour the hot water into the mixture and continue mixing until a light fluffy dough forms.
  5. Cover the dough and let it cool completely, preferably in the refrigerator for a few hours.
  6. When ready to cook, heat a skillet over medium heat.
  7. Divide the dough into 12 sections and roll each into a ball.
  8. Roll the dough balls into tortillas between two sheets of oiled parchment paper.
  9. Peel off the parchment and cook the tortillas on both sides until they turn a lighter yellow and brown around the edges.
