One-Carb, Gluten-Free Tortillas

Instructions
- Boil the water.
- Whisk together the dry ingredients in a medium bowl.
- Mix the eggs and oil, then blend into the dry ingredients using a hand mixer.
- Pour the hot water into the mixture and continue mixing until a light fluffy dough forms.
- Cover the dough and let it cool completely, preferably in the refrigerator for a few hours.
- When ready to cook, heat a skillet over medium heat.
- Divide the dough into 12 sections and roll each into a ball.
- Roll the dough balls into tortillas between two sheets of oiled parchment paper.
- Peel off the parchment and cook the tortillas on both sides until they turn a lighter yellow and brown around the edges.
