Ingredients

  • 1 cup almond flour
  • ½ cup coconut flour
  • 3 tablespoons konjac powder (glucomannan)
  • 1 teaspoon salt
  • 4 large eggs
  • 2 tablespoons oil
  • 1 cup hot water

Instructions

  1. Boil the water.
  2. Whisk together the dry ingredients in a medium bowl.
  3. Mix the eggs and oil, then blend into the dry ingredients using a hand mixer.
  4. Pour the hot water into the mixture and continue mixing until a light fluffy dough forms.
  5. Cover the dough and let it cool completely, preferably in the refrigerator for a few hours.
  6. When ready to cook, heat a skillet over medium heat.
  7. Divide the dough into 12 sections and roll each into balls.
  8. Flatten the balls between two sheets of oiled parchment paper to form tortillas.
  9. Cook each tortilla on both sides until they change color and brown around the edges.
