Instructions
- 1. Preheat the oven to 375 degrees.
- 2. Blanch the peaches in boiling water for 1 minute, then transfer to an ice bath to peel.
- 3. Slice the peaches and combine with gluten-free flour, salt, and maple syrup in a bowl.
- 4. Place the peach filling in a 9x9 inch pan and bake for 20 minutes.
- 5. In another bowl, mix the topping ingredients: oats, cornmeal, walnuts, coconut, maple syrup, cinnamon, salt, and coconut oil.
- 6. After 20 minutes, remove the pan from the oven and spread the topping over the peaches.
- 7. Bake for an additional 15 minutes or until the topping is browned.
- 8. Cool on a wire rack and serve warm or chilled.
