  • ½ cup whole grain cornmeal
  • 1 cup finely chopped walnuts
  • ½ cup unsweetened shredded coconut
  • ½ cup maple syrup
  • 1 tsp cinnamon
  • ¼ tsp salt
  • cup coconut oil

Instructions

  1. 1. Preheat the oven to 375 degrees.
  2. 2. Blanch the peaches in boiling water for 1 minute, then transfer to an ice bath to peel.
  3. 3. Slice the peaches and combine with gluten-free flour, salt, and maple syrup in a bowl.
  4. 4. Place the peach filling in a 9x9 inch pan and bake for 20 minutes.
  5. 5. In another bowl, mix the topping ingredients: oats, cornmeal, walnuts, coconut, maple syrup, cinnamon, salt, and coconut oil.
  6. 6. After 20 minutes, remove the pan from the oven and spread the topping over the peaches.
