Ingredients

The chicken wings

  • 2 pounds chicken wings

The coating

  • 2 teaspoons smoked paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • teaspoon cayenne pepper (optional)
  • cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder

The frying oil

  • ½ cup oil (or enough to fill an inch of the pan)

Instructions

  1. 1. Pat dry the chicken wings and separate the flats from the drums.
  2. 2. Combine all spices, flour, cornstarch, baking powder, and salt in a bowl.
  3. 3. Toss the wings in the flour mixture until fully coated and shake off excess.
  4. 4. Heat oil in a deep fryer or pot to 350°F.
  5. 5. Fry the wings in small batches for 8-10 minutes until golden and crispy.
  6. 6. Place the wings on a wire rack to drain excess oil.
