Ingredients

The chicken wings

  • 3 pounds chicken wings party style

The marinade and coating

  • cups buttermilk
  • 3 large eggs lightly beaten
  • cups all purpose flour
  • teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • teaspoon baking powder
  • as needed cups vegetable oil for frying
  • 1 tablespoon chopped parsley (optional garnish)

Instructions

  1. Combine chicken wings and buttermilk in a large bowl and refrigerate for at least 30 minutes.
  2. In a medium bowl, place the beaten eggs. In another bowl, combine flour, salt, pepper, paprika, garlic powder, onion powder, and baking powder.
  3. Coat each chicken wing in flour, dip in egg, and coat again in flour.
  4. Heat vegetable oil in a deep pot to 350°F.
  5. Fry chicken wings in batches for 7-8 minutes until golden brown.
  6. Drain on paper towels and serve, garnished with parsley if desired.
