Ingredients

The salmon

  • 4 fillets salmon
  • cup All-Purpose Stir-Fry Sauce

The vegetables

  • 1 pound French green beans
  • ¼ pound fresh shiitake mushrooms
  • 1 whole red bell pepper
  • 1 tablespoon toasted sesame seeds
  • 2 whole scallions

The sauce

  • ¾ cup All-Purpose Stir-Fry Sauce
  • 1 tablespoon avocado oil

Instructions

  1. Marinate the salmon fillets in ⅓ cup of All-Purpose Stir-Fry Sauce for at least 15 minutes.
  2. Preheat the oven to 400°F.
  3. In a bowl, whisk together ¼ cup of All-Purpose Stir-Fry Sauce and 1 tablespoon of avocado oil.
  4. Add the green beans, mushrooms, and bell pepper to the sauce and toss well.
  5. Place the salmon skin-side down on a parchment-lined baking sheet.
  6. Arrange the vegetables around the salmon in a single layer.
  7. Bake for 10 to 15 minutes until the salmon is cooked to your liking.
  8. Brush the reserved sauce over the salmon and vegetables, then sprinkle with sesame seeds and scallions.
