Ingredients

Indian Spiced Hummus with Cilantro Pesto

  • 2 cups plain hummus
  • 1 teaspoon chipotle chile powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne
  • ½ cup fresh cilantro, finely chopped
  • ¼ cup raw pine nuts
  • ¼ cup olive oil
  • ¼ cup parmesan cheese, grated
  • to taste salt + pepper
  • to taste pomegranate arils
  • to taste roasted cashews + feta, for topping

Roasted Garlic and Parmesan Hummus with Rosemary Oil

  • ½ cup olive oil
  • 2 sprigs fresh rosemary
  • 2 cups roasted garlic hummus
  • ¾ cup grated parmesan cheese
  • 1 tablespoon white miso paste
  • to taste toasted sesame seeds, for topping

Pumpkin and Goat Cheese Hummus with Crispy Sage + Prosciutto Pesto

  • 3 ounces prosciutto, finely chopped
  • ½ cup fresh sage, finely chopped
  • ½ cup kale, finely chopped
  • 2 tablespoons olive oil
  • 2 cups plain hummus
  • ½ cup pumpkin puree
  • 2 tablespoons pure maple syrup
  • 4 ounces crumbed goat cheese
  • to taste dried cranberries + toasted pine nuts, for topping

Roasted Root Vegetable Chips

  • 1 inch purple sweet potato, sliced 1/8 inch thick
  • 1 inch orange sweet potato, sliced 1/8 inch thick
  • 1 large yellow beet, sliced 1/8 inch thick
  • 1 large red beet, sliced 1/8 inch thick
  • 2 tablespoons olive oil
  • to taste salt + pepper
  • 1-2 tablespoons fresh rosemary, chopped

For the Board

  • to taste fresh veggies such as carrots
  • to taste fresh fruit such as grapes, pomegranates, figs and/or persimmons
  • to taste baked pita chips, naan or fresh pita

Instructions

  1. Prepare the Indian Spiced Hummus by mixing hummus with spices and topping with cilantro pesto and garnishes.
  2. For the Roasted Garlic and Parmesan Hummus, infuse olive oil with rosemary, mix with hummus and top with fried rosemary.
  3. Make the Pumpkin and Goat Cheese Hummus by cooking prosciutto and mixing it with hummus, pumpkin, and maple syrup, then topping with garnishes.
  4. For the Roasted Root Vegetable Chips, toss sliced vegetables with olive oil, salt, pepper, and rosemary, then bake until crispy.
  5. Arrange all hummus recipes on a large serving board with fresh veggies, fruits, and chips.
