Ingredients

Chocolate Crust

  • 1 cup nuts (½ pecans, ½ almonds)
  • ½ cup oat flour
  • ¼ cup unsweetened dark cocoa
  • ¼ cup milk of choice
  • 1 Tbsp granulated sweetener of choice
  • 1 Tbsp agave
  • ¼ tsp salt

Peanut Butter Filling

  • 1 lb silken tofu
  • 1 ¼ cup powdered peanut butter
  • ¼ cup agave
  • 1 tsp vanilla extract
  • ½ tsp salt

Chocolate Icing

  • 1 small avocado
  • ½ + 1/8 cup unsweetened dark cocoa
  • ½ cup milk of choice
  • 4 Tbsp granulated sweetener of choice
  • 1 Tbsp vanilla extract
  • ¼ + 1/8 tsp salt

Instructions

  1. Prepare a 9” springform or round cake pan by greasing or lining it with parchment paper.
  2. For the crust, pulse the nuts in a food processor until finely chopped, then add oat flour, cocoa, milk, sweetener, agave, and salt, and pulse until combined.
  3. Press the crust mixture into the bottom of the prepared pan and place it in the freezer to set.
  4. For the peanut butter filling, drain the silken tofu and press out excess water.
  5. In a bowl, mix the powdered peanut butter, agave, vanilla, and salt, then add the drained tofu and whip until smooth.
  6. Spread the peanut butter filling over the set crust and return it to the freezer to harden.
  7. For the chocolate icing, blend the avocado, cocoa, milk, sweetener, vanilla, and salt until smooth.
  8. Once the peanut butter filling is set, spread the chocolate icing over it and freeze for a few hours.
  9. Let the pie thaw for 15-30 minutes before slicing and serving.
