Ingredients

The apple filling

  • 4-5 large crisp apples
  • ½ cup reduced-sugar dried cranberries
  • 3 tablespoons pure maple syrup or honey
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon nutmeg

The crisp topping

  • 1 cup old fashioned rolled oats
  • ¾ cup chopped pecans or walnuts
  • ½ cup almond meal
  • ½ cup unsweetened shredded coconut
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¼ cup melted virgin coconut oil
  • ¼ cup pure maple syrup or honey

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish.
  2. Peel and core the apples, then cut them into 1-inch chunks.
  3. In the baking dish, mix together the apples, cranberries, maple syrup, cornstarch, lemon zest, lemon juice, cinnamon, ginger, and nutmeg.
  4. In a separate bowl, combine the topping ingredients: oats, nuts, almond meal, coconut, cinnamon, and salt.
  5. Drizzle the oil and maple syrup over the topping mixture and combine until moistened.
  6. Sprinkle the topping over the apple filling.
  7. Bake for 45 to 50 minutes, checking at 30 minutes and covering with foil if browning too quickly.
  8. Let rest for 5 to 10 minutes before serving.
