Ingredients

Filling

  • 6 pieces apples, peeled, cored and chopped
  • 2 cups cranberries
  • 2 tablespoons lime juice or lemon juice
  • 3 tablespoons all-purpose flour or gluten-free flour mix
  • 2 teaspoons ground cinnamon
  • 3 tablespoons sugar (coconut, cane, or brown sugar)
  • 3 tablespoons maple syrup

Crisp Topping

  • ¾ cup old fashioned oats
  • ¾ cup all-purpose flour or gluten-free flour mix
  • ½ teaspoon sea salt
  • 3 tablespoons sugar (coconut, cane, or brown sugar)
  • 6 tablespoons salted vegan butter, cold, cut into chunks

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a bowl, mix the apples, cranberries, and lime juice.
  3. Sprinkle the flour, cinnamon, coconut sugar, and maple syrup over the fruit mixture and combine.
  4. Pour the filling into a greased casserole dish and spread evenly.
  5. In another bowl, mix all the crisp topping ingredients except the vegan butter.
  6. Add the butter and use your fingers to crumble it into the mixture until it is crumbly.
  7. Sprinkle the topping evenly over the fruit filling.
  8. Bake for 45 minutes until the topping is golden brown and the fruit is bubbling.
  9. Allow to cool slightly before serving.
