Ingredients

The filling

  • 7 pieces honey crisp apples, cored, peeled and cut into 1/8" slices
  • 2 cups frozen cranberries
  • 1 cup dark brown sugar
  • ¼ cup all-purpose flour
  • 1 tbsp finely grated orange zest
  • 3 tbsp fresh orange juice or a dash of lemon juice
  • 1 teaspoon ground cinnamon

The oat crumble

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup dark brown sugar
  • teaspoons vanilla extract
  • ¾ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • a pinch salt
  • ¼ teaspoon nutmeg (optional)
  • ¾ cup unsalted vegan butter, cut into pieces, frozen or cold

Instructions

  1. Prepare the crumble by mixing all ingredients except the butter until combined, then add butter and mix until large clumps form. Freeze for 30 minutes.
  2. Combine all filling ingredients in a large mixing bowl, stir well, and let sit for up to 15 minutes.
  3. Preheat the oven to 350°F and lightly grease a baking dish.
  4. Add the filling to the baking dish, leaving excess juices behind, and top with the crumble mixture.
  5. Bake for one hour or until the topping is golden brown and bubbling. Let cool for 15 minutes before serving.
