Ingredients

Cranberry Filling

  • 24 ounces fresh cranberries
  • cup packed brown sugar
  • ½ cup freshly-squeezed orange juice
  • 1 teaspoon vanilla extract
  • 1 unit zest of one orange

Crispy Oatmeal Topping

  • 1 cup old-fashioned oats
  • ½ cup chopped nuts (pecans, walnuts, almonds, pistachios)
  • ½ cup packed brown sugar
  • cup melted butter or coconut oil
  • ¼ cup flour (or almond meal)
  • 1 pinch salt
  • 1 pinch ground cinnamon

Instructions

  1. Preheat the oven to 350°F and grease ramekins or a baking dish.
  2. Mix the cranberry filling ingredients in a bowl and set aside.
  3. Combine the crispy oatmeal topping ingredients in another bowl and set aside.
  4. Distribute the cranberry filling into the ramekins or pour into the baking dish.
  5. Sprinkle the oatmeal topping evenly over the cranberry filling.
  6. Bake for 25-30 minutes until bubbling and golden, then let cool for 5 minutes before serving.
