Vegan Apple Crumble

Ingredients

The filling

  • 7 pieces honey crisp apples, cored, peeled and cut into 1/8” slices
  • ¾ cup dark brown sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon finely grated orange zest
  • ½ pieces juice of a lemon
  • 1 teaspoon ground cinnamon
  • 1 tablespoon corn starch

The oat crumble

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup dark brown sugar
  • teaspoons vanilla extract
  • ¾ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • a pinch salt
  • ¾ cup unsalted vegan butter, cut into pieces, frozen or cold

Instructions

  1. Prepare the crumble by mixing all ingredients except for the butter in a bowl until combined.
  2. Add the butter and mix with your hands until large clumps form, then freeze for 30 minutes.
  3. For the filling, combine all filling ingredients in a large mixing bowl, stir well, and let sit for up to 15 minutes.
  4. Preheat the oven to 350°F and grease your baking dish.
  5. Toss the filling one last time, then add it to the dish, leaving excess juices behind.
  6. Top the filling with the crumble, mounding as needed, and bake for one hour until golden brown and bubbling.
  7. Let cool for 15 minutes before serving with ice cream.
